1. Take the okra pods and cut them into 1/2 inch
chunks.
2. Cut the bacon into little pieces and fry to a crisp - Take out
of grease and save the grease.
3. Peel and cut the potatoes into 1/2 inch chunks put the okra, potatoes
and bacon into a large mixing bowl.
4. Add the 4 eggs and mix until everything is coated spinkle in garlic
powder, basil, salt and pepper according to taste and mix thouroughly.
5. Add in a cup or more of corn meal a little at a time and mix until
everything is coated completely and a bit doughy.
6. Heat up bacon grease you saved and add a stick of butter.
7. When it is hot, add in the okra mixture a little at a time stirring
to coat eveything in the grease.
8. Fry until golden brown, stirring almost constantly to break up
the pieces so they don't cook into one big piece. You want the pieces
of okra and potatoes to be somewhat individual when done and you do
this by continually mixing in the fry pan and breaking them apart
as they fry.
9. Salt to tase and serve hot with your favorite meat.
Note From Grandma:
This is one of my husbands favorite vegetable dishes which he was
taught how to cook when he was much younger. It goes perfectly with
Southern
Fried Pork Chops and I am going to include my husbands take on
that recipe also.
