Grapefruit in Brandy
This recipe will serve 6 people

Cooking Time: 8 Minutes
Ingredients
4 Large Grapefruit
4oz Castor Sugar
1 Level Teaspoon of Cinnamon
4 Tablespoons of Brandy
Method
1. Cut off all the peel and pith from the grapefruit
and carefully poke out the pithy core with the little finger.
2. Slice the fruit into ½in. thick rounds.
3. Put the sugar in a large saucepan with ¼
pint of cold water and the cinnamon. Cook over a low heat, stirring
frequently, until the sugar has dissolved, then, boil the syrup for
6 minutes turning once.
4. Arrange the grapefruit slices on a serving
dish, pour over the brandy and serve hot or chilled.
Note from Grandma
The slightly acid flavor of grapefruit is equally
refreshing before or after a rich main course. Slices of grapefruit,
poached in syrup and doused with brandy, give a clean taste to the
palate.
