Cranberry Orange Bread

Ingredients

2 Cups of flour
1 Cup of sugar
1½ Tsp. of baking soda
½ Tsp. of salt
½ Tsp. of cinnamon
½ Tsp. of nutmeg
1 Egg
½ of Cup orange juice
2 Tbs. of melted butter
2 Tbs. of hot water
1 Cup of fresh or frozen cranberries alternatively you can use 1½ cups of dried cranberries
1 Small can of mandarin oranges which have been drained
1 Cup of coarsely chopped walnuts

Method

1. Preheat oven to 350°

2. In a large mixing bowl, combine all of the dry ingredients.

3. In another bowl, beat egg and then add orange juice, vanilla, zest, butter and hot water. Add this mixture to the dry mix, stirring until moistened.

4. Spoon the mixture into a greased 9x5x3 loaf pan.

5. Bake for 60 minutes or until a toothpick inserted into the center comes out clean.

6. Leave to cool for 10 minutes before transferring to a cooling rack.
